Summer Recipe: Banana Chocolate ‘Ice Cream’

What is better than a cool treat in the summer? A healthy one! Powers Health Clinical Dietitian Sara Kremitzki, RDN, LD, offers this fresh recipe from the American Diabetes Association.

“This is one of my personal favorites. I call it Banana ‘Nice’ Cream,” Kremitzki said. “It packs everything we love about traditional ice cream, such as a sweet chocolate flavor and creamy texture, into a healthier package. Both kids and adults can enjoy this summer treat!”

Kremitzki’s favorite topping is chopped walnuts or peanuts. “Add them on top for added crunch and healthy fats,” she said.

Don’t like chocolate? “That’s OK! Instead use some vanilla protein powder in place of the cocoa powder for a banana-vanilla twist,” Kremitzki said. Enjoy!

Ingredients:

2 med banana(s)
1/3 cup skim milk
2 tbsp cocoa powder
1 cup whipped topping (fat-free)

Instructions:

  1. Peel bananas and slice into 1/4-inch coins. Place in a bowl and freeze for at least 2 hours.
  2. Once bananas are frozen, add the bananas, milk and cocoa powder (or protein powder) to blender. Blend until smooth.
  3. Fold in the whipped topping.
  4. Place mixture in a freezer-safe container and freeze for at least 30 minutes.
  5. Scoop into 1/2-cup containers to serve.
